La Cumbre represents the newest addition to our offerings from Costa Rica. The Jiminez family has been in the coffee business for four generations and more than ninety years. Today, they operate three farms along with a wet mill, dry mill, and roasting business. The farms and micromill are currently led by Minor and Nancy Jiminez.
The focus at La Cumbre is on efficiency and sustainability. Minor, an agronomist by trade, works tirelessly to maximize production across their farms and mills while minimizing environmental impact. Their wet mill is designed to recirculate and reuse all the water used to move coffee through the system so that none is wasted. They use an eco-pulper purchased from Colombia to create their honey-processed coffees with minimal water usage. Both the wet and dry mills are built from stainless steel to ensure long-term durability. The dry mill also employs an advanced mechanical dryer that recirculates hot air within its system, using far less energy than traditional dryers.
The family produces about ten containers of coffee per year for export and has also expanded into roasting to ensure that all their coffee finds a market. They sell under two different brands in Costa Rica and internationally under the La Cumbre name. It is remarkable to see a family operation of this caliber managing every step of the process, from seedling to roasted coffee.
Now in our second year working with La Cumbre, we’re excited to showcase two exceptional coffees: Black Honey Reposado and White Honey Reposado. For these lots, the Reposado process involves fermenting the coffee cherries in tanks for thirty-six hours before de-pulping. This resting stage, or “reposado,” deepens the fruit character and imparts a vivid red color to the coffee. We’re proud to continue our partnership with the Jiminez family and look forward to sharing more of their outstanding coffees in the years ahead.
