Finca La Chorrera reflects Víctor Alfonso Bonilla's dedication to producing exceptional specialty coffee in the mountains of La Argentina, Huila. At just 33 years old, Víctor is a third-generation coffee producer and certified Q Grader whose pursuit of quality led him to establish Finca La Chorrera as a home for the rare Bourbon Aruzi cultivar. Drawn to its vibrant character, outstanding cup quality, and unique potential, he has devoted the farm exclusively to its cultivation.
Situated at 1,890 meters above sea level, Finca La Chorrera is planted entirely with Bourbon Aruzi. After careful hand-harvesting, cherries are depulped the same day and fermented in sealed tanks for 36 to 40 hours before being washed using an Eco-Mill system designed to reduce water consumption. The coffee is then slowly dried in covered marquesinas for up to 18 days, helping preserve the cultivar's clarity, sweetness, and complexity.
