Fazenda Paraíso is a family-run farm in Cerrado, Brazil operated by Amarildo José Borges and his wife Rosemary. The farm spans 208 hectares, with 116 hectares planted in Catuaí and Mundo Novo coffee varieties. The remaining land is a mix of forest reserve and pasture—home to the family’s 1,000 head of cattle, and a lively crew of 30 dogs and nearly as many horses. The Borges family’s love for animals is impossible to miss. In fact, they’re active members of the local horse board, and their equestrian team has brought home numerous medals proudly displayed at the farm.

At Fazenda Paraíso, attention to detail is everywhere; from the mill to the fields to the animals they care for. Amarildo even makes his own organic fertilizer using coffee husks and cow manure, showcasing his resourcefulness and commitment to sustainable farming.

Coffee at Paraíso is both mechanically and hand-harvested, then dried for 10–12 days on cement patios. A final strip-pick is cleaned and finished in mechanical dryers to remove detritus that can cause future pest problems. While the farm primarily produces natural process coffees, Amarildo has been exploring experimental anaerobic lots in small batches.
