La Bohemia farm has been home to Raquel Lasso and her husband Carlos for nearly 30 years. It is nestled on the Buenos Aires trail near Nariño at 2000 meters above sea level. The farm spans 6 hectares, with around 10,000 coffee trees. Raquel and Carlos work in harmony—Carlos oversees the processing of each lot, ensuring every detail is perfect. He even tastes the liquid from each fermentation to gauge the ideal fermentation time. Raquel focuses on innovative projects, including a self-sustainable greenhouse to grow vegetables and provide additional income during the off-season. The farm’s altitude and misty microclimate create a unique environment for their coffee.
Carlos meticulously processes this unique Bourbon lot, carefully managing fermentation for 96 hours. He monitors the mosto, describing it as "tasting like a good wine." Once the coffee reaches the right fermentation stage, it’s washed with minimal water to remove the mucilage. Afterward, the beans are sun-dried on raised beds beside Carlos's house and stabilized for 25 days in GrainPro bags before milling.
